After trying (below) lamb stew .... I thought of something offering delicious and always use the fantastic coffee sauce .... the idea is to rediscover our Italian, our membership of a food culture varies, so I appropriated a term and a composition that Italians are not really to describe products and flavors but with ' Italy are right arm .... I state that I love the lamb and the fact that it was undercooked entirely voluntary for those who do not particularly like this can replace meat with the calf, and of course you can brown them in a pan before dialing the rolls so as to give a first cooking .....
4 grated potato strips with a mandolin, with robots or with a simple 4-sided grater
4 fresh artichoke hearts
100 g of lamb, cut into strips
1 small onion
little extra virgin olive oil salt and
pepper 1 small egg
breadcrumbs
batter of flour, water and milk very thick almost like a cream
Peel the artichokes and keep only the part most tender cut into quarters, blanch them .... when you will pass softened in a pan with olive oil and chopped onion .... if you needed it to dry completely, then chop the water with a knife, remove the filaments the most annoying and a little bowl combine beaten egg and bread crumbs until mixture is consistent impellicolate .... the sushi mat and place it in front of you and begin to fix a layer of potatoes, brush on a thick batter and place the artichoke, place the lamb srtiscetta and close as you close the sushi .... let it rest in the freezer for 1 Oretta. I recommend you do the small fry rolls because it will be more comfortable ...

Fry in olive oil celery, carrots and onions, coarsely chopped, add the few scraps of lamb, brown and deglaze with red wine, after a few minutes add 1 teaspoon ground coffee, stir and add a ladle of vegetable stock to cook and thicken the broth, and blend this with a blender to dive and make the sauce as smooth as possible .... when the sauce is ready to begin afriggere the rolls in hot oil seeds, cut them in half and place a spoonful of sauce on the coffee spoon, or within a short , a tuft of salad, rolls and .....
